  • 2 large heads broccoli Cut into florets
  • 2 pieces sweet potatoes Peeled and diced, about 8 cups
Spices
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 3/4 tsp smoked paprika
  • 1/2 tsp salt

  • 2 tbsp olive oil

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the diced sweet potatoes, broccoli florets, olive oil, garlic powder, onion powder, oregano, thyme, black pepper, cayenne pepper, paprika, and salt.
  3. Toss everything together until the vegetables are well coated.
  4. Spread the mixture in a single layer on a baking sheet.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and the broccoli is crisp and slightly charred, stirring halfway through.
  2. Serve warm.

Notes

For best results, ensure sweet potatoes are cut into even pieces for uniform cooking. Experiment with spices or add balsamic glaze before serving for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
