Ingredients
  

For the chicken
  • 2 large thick boneless skinless chicken breasts
For the coatings
  • 1 tsp garlic powder
  • 1 large lemon (juiced)
  • 2 large eggs
  • 1/2 cup all-purpose flour Can use whole grain flour for a healthier twist
  • 1 tsp freshly ground black pepper
  • 1 tsp salt
  • 1 1/2 cups panko bread crumbs
  • 1 1/2 cups Parmesan cheese

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow dish, combine the flour, garlic powder, black pepper, and salt.
  3. In another bowl, whisk the eggs and lemon juice together.
  4. In a third bowl, mix the panko bread crumbs and Parmesan cheese.
  5. Dip each chicken breast first into the flour mixture, then into the egg mixture, and finally into the panko mixture, pressing to ensure adherence.
Cooking
  1. Place the coated chicken breasts in the air fryer basket in a single layer.
  2. Air fry for 10-12 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden and crispy.
  3. Serve hot and enjoy!

Notes

To keep your leftovers fresh, store any uneaten chicken in an airtight container in the fridge for up to 3 days. When reheating, the air fryer is your best option; it will bring back that crispy texture. For added flavor, marinate chicken in lemon juice and spices for an hour before cooking.
